Cranberry Orange Pancakes

Cranberry-haters need not read any further. Cranberries in the pancakes, cranberries in the sauce, perhaps even a cranberry bog in the chambers of my heart. Cranberries are one of my favorite things about the holidays, and it's extra special to cook with them because they're truly seasonal. I never see fresh cranberries for sale except at this time of year.

The fresh cranberries in the batter provide a perfect tangy pop when you bite into them, and the stewed ones in the syrup balance everything out with sweetness. Unfortunately, my sons don't care for the tartness. More for me! I hope you enjoy them too. :D


Time: 20 minutes

Yield: 7 large pancakes

What You'll Need for the Pancakes:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg, beaten
  • 3 tablespoons butter, melted
  • 1 cup fresh cranberries
  • 1 large orange, zested and juiced (in that order, it's much easier)
Directions:
1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, orange juice, egg and melted butter; mix until smooth. Fold in cranberries and zest.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

What you'll need for the Syrup:
  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 1 teaspoon each of orange and maple flavoring (or maple syrup)
  • 1 cup orange juice or water (if you have orange juice, don't add orange flavoring above)
Directions:

1. Combine all the ingredients in a small pot or pan over medium heat.

2. Allow to simmer at least until the cranberries have popped and sauce starts to thicken. Cook until desired consistency is reached - the longer you cook it, the thicker and stickier it will be.

3. Serve on top of hot pancakes.
